  1. 10 oz 284g Frozen green beans - defrosted

  2. 6 oz 170g New potatoes - unpeeled (small)

  3. And diced 1 Tuna in water - drained (6 oz)

  4. 3 Flat anchovies - *optional*

  5. 2 tablespoons 30ml Pesto sauce

  6. 1 cup 237ml Mayonnaise

  7. Salt and pepper - freshly ground

  8. 3 tablespoons 45ml Parsley - chopped

  1. Blanch the defrosted green beans for 2 minutes in boiling water. Drain and plunge in cold water. Drain.

  2. Place the cooked potatoes, beans and tuna in a salad bowl.

  3. Mix the anchovies and pesto with the mayonnaise and pour onto the salad. Add salt and pepper and toss.

  4. Garnish with parsley.
