  2. CUCUMBER KIM CHEE

  6. 3 Cucumbers -- unwaxed

  7. 1 T -Salt

  8. -Cold water

  9. 1/2 c -Water

  10. 1/3 c Carrot -- grated

  11. 2 Scallions -- sliced thin

  12. 1 Garlic clove -- minced

  13. 1 t -Salt

  14. 1/2 ts Red pepper flakes

  15. 1/2 ts Cayenne

  16. Halve lengthwise, seed and cut cucumber into 1 inch pieces. In a bowl,

  17. 1 Tbsp salt and let it stand for 15 minutes. Rinse

  18. the cucumber under running cold water and in a bowl combine it with 1/2

  19. 2 scallions sliced thin,

  20. 1 minced garlic clove,

  21. red pepper flakes and cayenne. Let the mixture stand, uncovered at room

  22. temperature stirring several times, for at least 3 days, transfer it to a

  23. jar and chill it. The pickle keeps several days.
