  2. Caribou Meat Pie

  7. 1 1/2 lb Ground Caribou or 1 1/2 lb Stewing meat -- coarsely diced

  8. 1 md Onion, chopped

  9. 1 cl Garlic, minced

  10. 3 tb Oil

  11. 2 c Water

  12. 2 tb Worcestershire sauce

  13. 1 t Marjoram

  14. 1 t Thyme

  15. 1 t Celery seed

  16. 1 t Salt

  17. 1/2 ts Pepper

  18. 1 Bay leaf

  19. 1 lb Diced potatoes

  20. 1 Diced carrot

  21. 2 tb Flour

  22. 1/2 c Green peas

  23. Pie crust

  24. Saute meat, garlic and onions in heated oil in a large skillet, until meat

  25. has

  26. browned. Transfer to a large saucepan. Add water, herbs, Worcestershire

  27. sauce,

  28. salt and pepper. Bring to a boil, reduce heat, simmer 1/2 hour if ground

  29. meat

  30. 1 hour if cubed meat. Add potatoes and carrots, cook

  31. 20 minutes

  32. longer.

  33. Remove bay leaf; make a slurry of the flour and a little water and stir in.

  34. Bring to a boil until the mixture thickens. Add peas. Remove from the heat

  35. and set aside.

  36. Prepare your favorite pie crust and place the bottom crust into a pie pan.

  37. Pour the meat mixture into the pie pan. Cover with pie crust, flute edge,

  38. 15 to 20 minutes or until crust is nicely browned. - - - - - - - - - - - - - - - - - -
