  1. 1 Cucumber large - peeled, halved, seeded, and diced

  2. 1 1/2 lbs 681g / 24oz Spinach leaves fresh - washed

  3. 6 tablespoons 90ml Frsh lemon juice

  4. 1 1/2 lbs 681g / 24oz Sorrel leaves - fresh

  5. 3 tablespoons 45ml Horseradish root - fresh

  6. 1 teaspoon 5ml Salt

  7. 3/4 teaspoon 3.8ml Sugar

  8. 1/2 lb 227g / 8oz Crab meat

  9. 1 1/2 lbs 681g / 24oz Poached sturgeon - in

  10. 1" pcs. OR 1 1/2 lbs 681g / 24oz Poached whitefish in

  11. 1" pcs.

  12. 1 cup 237ml Scallions sliced

  13. 1/4 cup 15g / 1/2oz Onion chopped

  14. 1 Garlic clove minced

  15. 2 oz 56g Vodka

  16. 1 1/2 Beer - or -

  17. 1 1/2 Kvas (see attached recipe)

  1. Recipe Instructions Boil 3 quarts of water in a large pan. When boiling briskly add the spinach and the sorrel. Cook uncovered at a brisk boil for 6-8 minutes. Drain water off, wash vegetables in cold water, then puree in blender. cool to room temperature. Combine the other ingredients in bowl, except for the beer and vodka. When mixed well slowly add the beer and the vodka stirring constantly. Chill for a minimum of 2 hours before serving. ORIGIN: Olga Gorechev, St. Petersburg, Russia
