  7. 1 1/4 pounds ripe plums -- quartered and pitted

  8. 1 small red onion -- quartered

  9. 1 cup fresh cilantro

  10. 3/4 cup fresh mint

  11. 1 tablespoon white wine vinegar

  12. 1/2 teaspoon salt

  13. 1/4 teaspoon pepper

  14. 1/8 teaspoon red pepper

  15. Place plums and onion in a food processor; pulse 10 times, scraping

  16. sides of bowl occasionally. Add cilantro and remaining ingredients;

  17. pulse five times or until mixture is chopped. Do not over process

  18. mixture or salsa will become mushy. Six 1/2 cup servings. - - - - - - - - - - - - - - - - - -
