  1. Baked Lemon Chicken

  2. 3 lb chicken cut up into serving pieces

  3. 1/3 cup flour

  4. 1 tsp salt

  5. 1/2 tsp paprika

  6. 1/4 cup oil to saute

  7. 1 can ( 22 oz. ) lemon pie filling

  8. 1/2 cup water

  9. 1/4 cup soy sauce

  10. 1/4 cup cider vinegar

  11. Place flour and seasoning in bag and add chicken and shake bag to

  12. coat chicken pieces. Heat oil in heavy duty skillet and brown

  13. chicken on both sides. Arrange chicken in oblong baking pan. Combine

  14. pie filling, water, soy sauce and vinegar and pour over chicken.

  15. 375F uncovered

  16. 45 minutes to

  17. 1 hour or chicken is tender.

  18. Garnish with lemon slices and chopped parsley. Serves 4 Serve over

  19. hot rice.
