  5. 1 lb Asparagus

  6. 2 Carrots

  7. 2 ts Vegetable oil

  8. 3/4 lb Beef sirloin, strips

  9. 3 cl Garlic, minced

  10. 1 ts Cumin, ground

  11. 1/2 ts Chili paste or hot sauce

  12. 1 tb Lime juice

  13. 1/2 lb Wide rice stick noodles

  14. Coriander leaves

  15. --DRESSING--

  16. 1/3 c Peanut butter

  17. 1/4 c Soy sauce

  18. 3 tb Lime juice

  19. 1 tb Sesame oil

  20. 2 tb Water

  21. 1 ts Sugar

  22. 1/2 ts Chili paste

  23. 1 cl Garlic

  24. 1/4 c Fresh chopped Coriander

  25. Cut asparagus diagonally into 1 1/2 inch lenths. Peel and slice carrots

  26. diagonally.

  27. DRESSING: In salad bowl, whisk peanut butter, soy sauce, lime juice, water,

  28. oil, sugar, chili paste and garlic; stir in coriander.

  29. In wok, heat oil over high heat; stir-fry beef, garlic, cumin and chili

  30. paste for 2-3 minutes or until beef is browned but still pink inside. Add

  31. lime juice; stir-fry for 15 seconds. Add to dressing and toss to coat.

  32. In large pot of boiling salted water, cook noodles, asparagus and carrots

  33. for 4 minutes or until noodles are firm and vegetables are tender crisp.

  34. Drain and cool under running water; drain again and add to bowl. Toss with

  35. beef mixture until coated. Garnish with coriander
