  1. 3 c Cooked, steamed rice

  2. 6 Fresh cherry tomatoes

  3. 1/3c Scallions (chopped) Marinade (from jar) Hearts of artichoke and 1 Jars (8 oz.) quartered marin Peas (drained)

  4. 1 cn (8-1/2 oz.) petit pois

  5. 1/2ts Black pepper

  6. 1/2ts Salt

  7. 1/4ts Tabasco sauce

  8. 1/2ts Thyme

  9. 1/3c Oil

  10. 1/3c Vinegar

  11. 1 md Head romaine lettuce

  1. + Directions : Serve with cheese croquettes. Steam rice and set aside. In a bowl, mix vinegar, oil, thyme, Tabasco, salt and pepper. Add peas, hearts of artichoke, artichoke marinade form jar, scallions and tomatoes. Toss gently and place in refrigerator. Just before serving, add cooled rice to mixture and stir thoroughly. Arrange lettuce leaves on serving platter or on individual dishes and place mixture on top. Use 1/2 to 1 cup mixture per serving.
