  1. 4 large eggs

  2. 1 teaspoon taco seasoning

  3. 1 cup rinsed and drained canned black beans nonstick cooking spray

  4. 4 8 inch fat-free flour tortillas

  5. 3/4 cup shredded reduced-fat sharp cheddar cheese

  1. Preparation : 1. Combine eggs and taco seasoning; stir well with a whisk. Stir in beans.

  2. Coat a large nonstick skillet with cooking spray, and place over medium heat until hot. Add egg mixture, and cook until eggs are set, stirring occasionally.

  3. Heat tortillas according to package directions. Divide egg mixture evenly among tortillas. Sprinkle with shredded cheese, and roll up jelly-roll fashion. Serve immediately. Note: Jazz up these burritos with picante sauce, fat-free sour cream and sliced onions.
