  1. 1 whole chicken breast on the bone, skin and fat removed

  2. 2 1/2 cups canned low-sodium chicken broth

  3. 3 cups water

  4. 2 celery ribs, thinly sliced

  5. 1 medium onion, finely diced

  6. 1 cup 1/2-inch pieces carrots

  7. 1 cup 1/2-inch pieces zucchini

  8. 1 can (8 3/4 ounces) kidney beans, rinsed

  9. 1 can (8 ounces) stewed tomatoes, drained and chopped

  10. 1/2 cup alphabet pasta, cooked and drained

  11. 1/4 teaspoon salt

  12. 1/8 teaspoon pepper

  1. Put chicken, broth, water, celery and onion in a pot. Bring to a boil, reduce heat and skim top. Simmer 15 minutes. Add carrots and zucchini. Cook 15 minutes more until chicken is opaque near bone.

  2. Remove chicken. Shred meat and return to pot with remaining ingredients. Heat through.
