  6. 1 1/2 Lbs. rhubarb

  7. 1 1/2 C. water

  8. 3/4 C. sugar

  9. 1/2 Tsp. vanilla

  10. 3 Tbsp. cornstarch

  11. 1 C. heavy cream

  12. 1/4 C. sugar

  13. 1 Tsp. vanilla

  14. Wash rhubarb, trim and cut into 1/2 inch slices. Combine with

  15. water and sugar and simmer until soft. Stir in vanilla. Blend

  16. cornstarch with a little cold water to make a smooth stiff paste. Stirring

  17. constantly, add to rhubarb and cook for 5 minutes, or until

  18. thick and clear. Pour into glass serving dish. Whip cream until

  19. frothy, add sugar and vanilla and whip until stiff. Pipe through

  20. pastry tube in decorative swirls on compote or cover top with

  21. spoonfuls of whipped cream. If you prefer to serve without whipped

  22. cream, you could serve with a little milk poured on each portion. - - - - - - - - - - - - - - - - - -
