  1. 24 Scallions - root ends trimmed

  2. 3 tablespoons 45ml Almonds - toasted

  3. 1 minute

  4. Under broiler

  5. 2 Plum tomatoes - roughly chopped

  6. 2 Garlic cloves - thinly sliced

  7. 1 tablespoon 15ml Spanish paprika

  8. 10 Fresh mint leaves

  9. 2 tablespoons 30ml Chopped fresh parsley

  10. 1/4 cup 59ml Extra-virgin olive oil

  11. 2 tablespoons 30ml Vinegar

  1. Preheat grill.

  2. Place scallions on cooler part of grill and cook until dark green and tender, about 2 minutes per side.

  3. Meanwhile, place almonds, tomatoes, garlic, paprika, mint and parsley into a mortar. Grind to fine paste and place in a mixing bowl. Whisk in oil to emulsify and add vinegar. Remove scallions from grill and toss in bowl. Toss to coat and serve hot or cold.

  4. This recipe yields 6 servings.
