  1. 1 Carrot

  2. 2 Garlic clove - (s), minced (2 tsp)

  3. 1 Shallot - minced

  4. 1 Hot chili - minced

  5. 2 tablespoons 30ml Sugar

  6. 1/4 cup 59ml Fish sauce

  7. 1/4 cup 59ml Lime juice

  8. 1/4 cup 59ml Water

  9. 3 tablespoons 45ml Rice wine vinegar

  1. Shave the carrot into thin strips with a vegetable peeler. Stack the strips up 3-4 high and cut lengthwise into hair-thin slivers.

  2. Combine the garlic, shallot, chili, and sugar and pound to a smooth paste. Work in the fish sauce, lime juice, water and vinegar. Transfer the sauce to a bowl and stir in the carrot.
