  1. 1 (2 to 3kg) unsmoked gammon joint, soaked overnight

  2. 5 tablespoons prepared English mustard

  3. 5 tablespoons honey or maple syrup

  4. 2 tablespoons dark brown soft sugar

  1. Preheat the oven to 170 C / Gas mark 3. Pat the ham dry with kitchen roll.

  2. Place the ham in a shallow roasting tin. Score the fat in a criss-cross pattern. In a small bowl, mix together the mustard, honey or maple syrup and brown sugar. Coat the ham entirely with the glaze using a spoon or brush.

  3. Roast the ham uncovered for 2 hours in the preheated oven, or until heated through. Let it rest for about 15 minutes before carving to keep it from drying out.
