  1. Ingredients :Serves 6

  2. 600 g 1 kg

  3. 100 g Marinade

  4. 2 stalks

  5. 1 teaspoon 1/4 teaspoon 1 teaspoon 1 tablespoon 1 1 Garnishing

  6. 1 tablespoon 2-3 sprigs

  7. 100 g 75 g 1 Chicken fillet, thinly sliced

  8. Dried rice vermicelli

  9. Peanuts (groundnuts), roasted and crushed

  10. Mixed fish sauce

  11. Lemon grass, bulbous portions only, finely chopped

  12. Garlic, finely chopped

  13. Ground white pepper

  14. Sugar

  15. Fish sauce

  16. Chicken seasoning powder

  17. Red chili, finely chopped

  18. Pickled carrot and radish

  19. Thai basil leaves

  20. Bean sprouts

  21. Lettuce, julienned

  22. Cucumber, julienned

  1. Combine marinade ingredients and marinatepork for 5 minutes.

  2. Soak rice vermicelli in cold water for 20minutes then place into boiling water and cook for 5 minutes. Rinseunder cold water, drain and set aside.

  3. Grill chicken in medium charcoal flameuntil golden brown.

  4. To serve, divide garnish equally into 6serving bowls.

  5. Top with rice vermicelli and grilledchicken.

  6. Sprinkle with peanuts and mixed fishsauce.

  7. Toss well before eating.
