  2. CORN MUFFINS (SAMUEL)

  6. 2 c Corn flour or cornmeal

  7. - (yellow or blue)

  8. 1 c Whole wheat pastry flour

  9. 6 oz Soft tofu

  10. 3 c Water

  11. 1/2 ts Salt (sea salt in book)

  12. Mix flours. Crumble tofu into blender. Add boiled

  13. water and salt to tofu in blender (carefully) and blend until not quite smooth. (Just a few pulses

  14. please). Dont do this in too small blender or without

  15. lid like I did once. The goal is muffins, not 2nd

  16. degree burns. Add immediately to flour and mix well.

  17. Spoon into muffin tins or cast iron stick trays and 400 degrees for about 1/2 hour until golden

  18. brown. She suggests you heat oven first and place

  19. oiled muffin tins in to heat up beforehand to get a

  20. "wonderful crust".

  21. Please note, I have to oil the tins because I don't

  22. use teflon products around by birds, but this might

  23. work also...This is not sweet bread, I serve corn

  24. potato chowder with it. The corn sticks are better!
