  1. 3 lbs 1362g / 48oz Firm fish fillets

  2. 4 Potatoes - roasted and Sliced 2 Green peppers - sliced and Sauteed

  3. 2 Tomatoes - sliced

  4. Salt and fresh ground black

  5. Pepper - to taste

  6. 1 Lemon

  7. Charmoula sauce--

  8. 1/2 cup 8g / 1/3oz Chopped cilantro

  9. 1/2 cup 73g / 2.6oz Chopped parsley

  10. 5 Garlic - finely

  11. 5 tablespoons 75ml Lemon juice

  12. 1 1/2 teaspoons 7 1/2ml Salt

  13. 1 teaspoon 5ml Paprika

  14. 1/3 teaspoon 1.7ml Ground cumin

  15. Cayenne pepper - to taste

  16. 1/2 cup 118ml Olive oil - or more

  1. Preheat oven to 425F Prepare Charmoula Sauce. In a 9- by 13-inch baking pan, lay roasted potatoes slices, sauteed green peppers, and sliced tomatoes. Arrange fish fillets on top of the vegetables. Season with salt and pepper and top with Charmoula Sauce. Add a squeeze of lemon.

  2. Bake until fish is done (10 to 15 minutes, depending on size of fish).

  3. Charmoula Sauce: Combine cilantro, parsley, garlic, lemon juice, salt, paprika, cumin, and cayenne. Add enough olive oil to make a thick sauce.
