  2. 1 recipe prepared Quick Pizza Dough(listed in the pizza category)

  3. 2 tbsp. plus 2 tsp. olive oil

  4. 1 pound red onions, peeled and thinly sliced

  5. 1 cup prepared pizza sauce

  6. 3 tsp. yellow cornmeal

  7. 1/3 cup grated Parmesan cheese

  8. 1 cup roasted red bell peppers(see cooking article) chopped

  9. 1 cup shredded mozzarella cheese

  10. 1/4 cup crumbled Gorgonzola or blue cheese

  1. Preheat oven to 450 degrees. Heat 2 tbsp. oil in a large skillet. Add onions. Cover and cook, stirring occasionally, until tender, about 10 to 15 minutes. Stir in pizza sauce and heat through. Lightly oil a 14 inch pizza pan and sprinkle with cornmeal. Pat pizza dough evenly in the pan. Spread sauce evenly on dough, leaving a 1 inch margin on edge. Lay roasted pepper strips over sauce. Sprinkle with Parmesan, mozzarella and Gorgonzola. Drizzle remaining 2 tsp. oil over cheese. Place pizza in oven and reduce temperature to 425 degrees. Bake pizza about 25 minutes until crust is crisp and cheeses are melted and golden.
