  1. 1/2 cup Lean ham; cubed

  2. 1 cup Lowfat chicken broth

  3. 1 large Onion; chopped

  4. 3 Stalks celery; chopped

  5. 2 larges Carrots; chopped

  6. 8 cups Vegetable broth

  7. 1/4 teaspoon Cumin; more to taste

  8. 1/4 teaspoon Coriander; more to taste

  9. 1/2 teaspoon Hot pepper sauce; more to taste

  10. 1/2 cup Vegetable juice cocktail

  11. 1/4 cup Lime juice; or lemon juice

  12. 1/3 cup Wild rice

  13. cup Long-grain brown rice

  1. saute the veggies in the cup chicken broth til soft in a pressure cooker. Toss all remaining ingredients in the pot stir lock lid in place bring up to high pressure level out and cook for 12 min. Release pressure an let sit closed for 5 min..
