  1. 1 cup uncooked brown rice

  2. 1/2 cup chopped onion

  3. 1/2 cup chopped green pepper

  4. 2 cups water

  5. 2 skinned -- split chicken -- breasts

  6. 1 teaspoon pepper

  7. 2 teaspoons garlic powder

  1. Preparation : Mix rice, onion, green pepper and water and put in non-stick, 1-quart casserole (or line casserole dish with aluminum foil). Placed halved chicken breasts on top of rice mixture and sprinkle with pepper and garlic powder. Bake covered at 350 degrees F. for 45 minutes to 1 hour until rice absorbs all water.
