  9. 1/2 cup lowfat mozzarella cheese -- shredded

  10. 1 jar Sliced mushrooms -- (2 1/2 oz) drained

  11. 1/4 cup Plain low-fat Yogurt

  12. 1 tablespoon Chives -- Snipped

  13. 1 tablespoon Parsley -- Snipped

  14. 1 tablespoon Pimiento -- chopped

  15. 4 medium Skinless Boneless Chicken Breast Halves -- about 12 oz total

  16. 1 tablespoon Dry bread crumbs -- fine

  17. 1/8 teaspoon Paprika

  18. 1 tablespoon Plain low-fat Yogurt

  19. For filling, in a small bowl combine cheese, mushrooms, the 1/4 c yogurt,

  20. chives, parsley, and pimento. Place 1 chicken breast half, boned side up,

  21. between 2 pieces of clear plastic wrap. Working from the center to the edges,

  22. pound lightly with a meat mallet to 1/8 thickness. Remove plastic wrap.

  23. Repeat with remaining chicken. Sprinkle lightly with salt and pepper. Spread

  24. some of the filling on each chicken breast half. Fold in the sides and roll

  25. up. Arrange rolls seam side down in a 10x6x2 baking dish. Combine bread

  26. crumbs and paprika. Brush chicken with the 1 Tbspn yogurt; sprinkle with crumb

  27. 350 deg F. oven for 20-25 minutes or till chicken is tender

  28. and no longer pink.
