  1. Chocolate Pie

  2. Yield: 6 servings

  3. 3 cups whole milk

  4. 6 Tbsp unsalted butter

  5. 1 cup Ghirardelli ground chocolate

  6. 2 Tbsp additional ground chocolate

  7. 6 Tbsp granulated sugar

  8. 6 Tbsp cornstarch

  9. 1 pinch salt

  10. 5 egg yolks

  11. 1 1/2 tsp pure vanilla extract

  12. 9-inch baked pie shell

  13. 1 half-pint whipping cream

  14. 2 Tbsp granulated sugar

  15. In double boiler, scald milk with butter. Blend Ground Chocolate

  16. with sugar, cornstarch and salt. Using a wire whip, beat chocolate

  17. mixture into hot milk. Stir constantly for 5 minutes, or until

  18. filling begins to thicken. Mix a small amount of hot filling with

  19. egg yolks, then pour yolks into filling. Continue cooking a few

  20. minutes, stirring, until thick enough to hold a shape. Add vanilla.

  21. Pour into baked pie shell. Cover with plastic wrap touching surface

  22. to prevent film. Top with whipped cream, beaten with 2 tablespoons

  23. sugar.
