  1. 2 Garlic cloves - minced

  2. 1/4 cup 59ml Ketjap manis - store bought

  3. Homemade - (below)

  4. 1/4 cup 59ml Fresh lime juice

  5. 2 tablespoons 30ml Safflower oil

  6. Ketjap Manis

  7. 3/4 cup 148g / 5 1/5oz Sugar

  8. 1 cup 237ml Soy sauce

  9. 2 tablespoons 30ml Water

  10. 1 tablespoon 15ml Sliced lemon grass

  11. 1 Garlic - minced

  12. 1 Star anise

  1. Combine all ingredients. Mix well, Makes enough for 1 pound of chicken or fish.

  2. To use: Cut chicken or fish into cubes. Place in a glass bowl, pour in sauce and toss to coat. Let marinate 30 minutes to 1 hour before grilling.

  3. Ketjap manis: Caramelize 3/4 cup sugar in a heavy pot. Gradually stir in 1 cup soy sauce, 2 tablespoons water, 1 tablespoon sliced lemon grass, 1 minced garlic clove and 1 star anise. Bring to a boil, lower heat and simmer for 10 minutes. Cool and strain through cheesecloth. Makes about 1 1/4 cups. Store in the refrigerator.
