  1. 1/2 lb 227g / 8oz Smoked turkey sausage

  2. 2 Italian stewed tomatoes - (14 1/2 oz ea)

  3. 2 cups 474ml Low-sodium chicken broth

  4. 1/4 cup 15g / 1/2oz Yellow cornmeal

  5. 2 cups 474ml Frozen Italian vegetables

  6. 1/2 teaspoon 2 1/2ml Dried oregano - crushed

  7. Freshly-ground black pepper - to taste

  8. 1/4 cup 36g / 1 1/3oz Freshly-grated Parmesan cheese -

  1. Place the sausage in a saucepan, cover with water and simmer 10 minutes, or until just cooked through. Remove from the liquid, cool slightly and slice.

  2. Puree the tomatoes in a food processor. Pour into a saucepan and add the chicken broth. Bring to a boil and whisk in the cornmeal. Reduce the heat and simmer 15 minutes, stirring often.

  3. Add the sausage, frozen vegetables, oregano and pepper. Simmer 3 to 4 minutes, just until the vegetables are heated through. Garnish with Parmesan if desired.

  4. This recipe yields 4 servings.
