  1. 4 eggs, separated (see note on egg safety)

  2. 1 (14-ounce) can sweetened condensed milk

  3. 1/2 cup Key lime juice

  4. 1 teaspoon vanilla extract

  5. 1 prebaked 8-inch graham cracker piecrust

  1. In a large bowl, place 3 egg whites. Using an electric mixer, beat until firm peaks form, adding the vanilla when whites are almost finished. Set aside.

  2. Using an electric mixer, beat 3 egg yolks and 1 whole egg until thick, about 2 minutes, add condensed milk and lime juice. Stir until the mixture becomes thick and smooth. Fold in egg whites; pour into pie crust and freeze for at least 6 hours.

  3. The risk of food poisoning from eggs is highest in raw and lightly-cookeddishes. According to the USDA, egg mixtures are safe if they are cooked to160 degrees Fahrenheit.
