  1. 3 Egg yolks

  2. 2 tablespoons Lemon juice (fresh is best)

  3. teaspoon Cayenne pepper (more or less to taste)

  4. 1 Tub (8-oz) Diet Parkay margarine (must use Diet Parkay or sauce will not be thick)

  1. In blender, combine egg yolks, lemon juice and cayenne pepper. Mix on high until blended. Melt Diet Parkay (in microwave if available) and add to other ingredients in blender. Blend for a few seconds until thick.

  2. Calories: 74 per Tablespoon. Yield: 1-½ cups.
