  1. 4 x 200g chicken breasts,

  2. finely chopped 600g pumpkin, peeled, chopped

  3. 2 medium zucchinis, chopped

  4. 2 cups grated tasty cheese

  5. 1 1/2 large onions,

  6. very finely chopped 6 slices leg ham, diced

  7. 6 sheets puff pastry

  8. milk, for brushing

  9. tomato sauce,

  10. salad, to serve

  1. MAKES 96 Preheat oven to hot, 200°C. Line 2 oven trays with baking paper.

  2. Heat large frying pan on high. Fry chicken for 2-3 minutes, until just cooked through.

  3. Boil pumpkin and zucchini in a saucepan of boiling water for 10-12 minutes, until tender. Drain well and mash in a large mixing bowl. Add chicken, cheese, onion and ham. Season to taste and mix well.

  4. Cut 1 pastry sheet in half. Spoon mixture lengthways along long edge of each pastry half and roll firmly to enclose filing. Cut each roll into 8 segments. Repeat with remaining ingredients.

  5. Arrange rolls on trays and brush with milk. Bake for 20-25 minutes, until puffed and golden brown. Serve with sauce and salad.

  6. TOP TIP This recipe can be halved in quantity if you like, but these sausage rolls are great to freeze before or after cooking.
