  1. 2 cups cooked couscous

  2. 1/2 cup crushed home grown tomato

  3. 1 clove garlic , minced

  4. 1/4 salt

  5. 3 ounces gorgonzola

  6. 1 teaspoon Dijon mustard

  7. 1/4 cup virgin olive oil

  8. 1/8 cup white balsamic vinegar

  9. pepper

  10. 1 tablespoon fresh basil , chopped

  11. fresh herbs , mixed with

  12. fresh greens

  13. 1 small red onion , sliced very thinly

  1. In a food processor pulse garlic, salt, gorgonzola cheese, mustard.

  2. Feed in through feed tube oil and balsamic vinegar.

  3. In a bowl mix couscous and tomatoes add dressing.

  4. Season with basil and pepper.

  5. Serve on a bed of Fresh herbs mixed with fresh greens and onion.
