  1. 4 skinless, boneless chicken breast fillets

  2. 1 (200g) punnet mushrooms, sliced

  3. salt and freshly ground black pepper to taste

  4. 200g (7 oz) grated Cheddar cheese

  1. Preheat oven grill. Line a baking tray or dish with aluminium foil, and place chicken on top. Grill chicken breasts in preheated oven for 25 to 35 minutes or until they are cooked through and the juices run clear.

  2. Meanwhile, place mushrooms in a medium frying pan, season with salt and pepper to taste, cover frying pan and cook over high heat until their juices run. Once that happens, lower heat, remove cover and carry on cooking until liquid has evaporated. Add mushrooms to chicken and sprinkle grated cheese on top.

  3. Grill for a further 8 to 10 minutes, until the cheese is golden and bubbly.
