  1. 2 1/4 cups whole milk

  2. 3 egg yolks

  3. 4 tbsp flour

  4. 1 1/2 cup sugar

  5. 1 lb fresh peaches

  6. 1 dl Rum

  7. 3 1/2 tbsp sliced almonds

  1. In your stand mixer with the paddle attachment, add your egg yolks, 1 cup sugar & mix until creamy. Gradually add in the flour. Gradually add in milk and mix until well combined.

  2. Move mixture to a saucepan and cook over medium heat until it thickens. Stir continually.

  3. Turn off the heat and add 1 tbsp of Rum. Move mixture to an ovenproof dish (pie/tart size). Set aside.

  4. Peel peaches, remove pitts & cut in half. Place half cup of sugar into a saucepan with 1 cup of water. Cook over medium heat until is turns into syrup consistency. Stirring often. When it’s reached syrup consistency, add the peach halves and cook for approx 3 mins.

  5. Remove peaches with a slotted spoon and arrange them on top of cream mixture (cut side down). At this point, preheat the broiler in your oven. Continue cooking syrup mixture until it reduces by half. Stirring often.

  6. Sprinkle almonds on top of peaches & drizzle with syrup reduction. Place into oven under the broiler until almonds are toasted. Watch carefully, this will only take a few mins.

  7. Heat remaining Rum in the same saucepan you used for syrup. Once you have removed the dish from oven. Pour the heated rum on top & set on fire! Serve as soon as flame has evaported! Refrigerate any remaining portion.
