  1. 6 readymade flour tortillas

  2. 250g mature Cheddar cheese, grated

  3. 1 packet smoked pork sausages, sliced (Mattessons)

  4. 10g fresh coriander or parsley, chopped

  5. 4 spring onions, trimmed and finely chopped

  6. 6 tsp vegetable oil

  1. Take three tortillas and lay flat. Sprinkle over 1/3rd of the cheese, smoked sausage, coriander and spring onions. Repeat with the other two tortillas then place the remaining 3 tortillas on top.

  2. Heat 2 tablespoons of the oil in a heavy based frying pan. Carefully, slide in one tortilla into the pan and cook for 2-3 minutes on each side until golden brown and crispy on both sides. Cut into triangles and serve with a dip of your choice.

  3. Serve with guacamole, salsa and sour cream.
