  1. 1/4 cup applewood-smoked bacon , chopped

  2. 1 3/4 lbs ground sirloin

  3. 3/4 lb ground pork

  4. 4 large eggs

  5. 1/4 cup minced jalapeno

  6. 1 tablespoon Worcestershire sauce

  7. 1 teaspoon fresh ground black pepper

  8. 2 teaspoons salt

  9. 1/3 cup chopped fresh cilantro

  10. 1 tablespoon toasted ground Mexican oregano

  11. 3/4 cup cubed smoked cheddar cheese

  12. 1 cup diced white onion

  1. Preheat oven to 325°.

  2. Partially cook the bacon in an ovenproof skillet over low heat for 5 minutes.

  3. Do not let the bacon get hard.

  4. Transfer to a large bowl, add all the other ingredients, and mix very well.

  5. Put the mixture back into the skillet or into a standard 8-inch loaf pan and bake for 1 hour.
