  3. Drippings or butter

  4. Salt and pepper to taste

  1. Use good roast beef dripping if available or scraps of lamb or mutton.Peel and slice potatoes and put into pan with just enough water to cover base and keep potatoes from burning.Add the sliced onions and season well with pepper and salt.Cut in about 4oz dripping or butter or a proportionate quantity of meat scraps.Cover pan closely and simmer for about an hour.
