  1. 100 g (4 oz) bulgar (cracked wheat)

  2. 3 spring onions, finely chopped

  3. 1 garlic clove, peeled and finely chopped

  4. 3 tablespoons finely chopped parsley

  5. salt, freshly ground black pepper

  6. 2 tablespoons lemon juice

  7. 1 tablespoon olive oil

  8. 4 roll mop herrings

  9. 4 centre lettuce leaves

  10. 3 tablespoons plain unsweetened yogurt

  11. To garnish: thin onion rings caraway seeds

  1. Directions 1. Soak the bulgar in warm water for 30 minutes; squeeze out the excess moisture and drain the bulgar on a clean cloth.

  2. Mix the prepared bulgar in a bowl with the spring onions, garlic, parsley, salt and pepper to taste, lemon juice and olive oil.

  3. Cut each rollmop in half, place on a lettuce leaf on a small serving plate and spoon over a little yogurt.

  4. Spoon a pile of the prepared bulgar next to the herring, garnish with thin onion rings and a sprinkling of caraway seeds and serve.
