  1. 2 bulb(s) fennel , trimmed and cut into 1/4-inch-thick wedges

  2. 2 (about 1 1/2 pounds) Rome apples , cut into 1-inch wedges

  3. 1/4 cup(s) olive oil

  4. 1 tablespoon(s) honey

  5. 1/2 teaspoon(s) salt

  6. 1/4 teaspoon(s) fresh-ground pepper

  1. Roast the vegetables: Preheat oven to 400 degrees F. Place all ingredients in a large bowl and toss to combine. Arrange in a single layer on a baking sheet and place in the lower third of the oven. Roast for 20 minutes, turn fennel and apple pieces over, and roast until golden and cooked through -- about 20 more minutes. Serve warm.
