  1. 1 (family size box) fudge brownie mix, batter prepared according to package directions

  2. 1 (9 ounce) bag mint with dark chocolate mini candy bars

  3. Nonstick cooking spray, as needed

  4. 24 (1/2 ounce) scoops low-fat mint chip ice cream

  5. 3/4 cup dark chocolate topping, warm

  6. Fresh mint sprigs, optional

  1. Preheat oven to 350°F.

  2. Spray 9-inch x 9-inch baking pan lightly with nonstick cooking spray; line with baking paper or foil.

  3. Spread 1/2 brownie batter in pan; top evenly with candy bars. Spread remaining 2/3 batter evenly over top.

  4. Bake for 45 - 50 minutes, or until toothpick inserted in brownies comes out clean. Cool completely.

  5. Cut brownies into 12 even portions; slice each portion in quarters.

  6. For each sundae, portion 2 (1/2 ounce) scoops ice cream and 4 brownie quarters in bowl; top with 1 tablespoon dark chocolate topping. Garnish each with fresh mint sprig, if desired. Serve immediately.
