  2. RHUBARB SAUCE

  7. 1 lb Rhubarb, cut in

  8. 1 inch piecs

  9. 1/3 c Sugar

  10. 1/8 ts Cinnamon

  11. 1 pn Salt

  12. Wash and cut rhubarb and combine, in a 2 qt saucepan,

  13. with sugar, cinnamon, and salt. Bring to a boil;

  14. reduce heat, cover and simmer until saucy-5-8 minutes.

  15. See NOTE. Cool and refrigerate until ready to use

  16. NOTE: TO THICKEN for use in recipes: Mix 1 TB

  17. cornstarch with 2 TB water and stir into rhubarb

  18. mixture as soon as it's saucy. Cook, stirring until

  19. 3/4 cups.
