  1. 2 1/2 cups cooked leftover roast beef or deli roast beef, cut into 1/2-inch pieces

  2. 1 (15-ounce) can mild chili beans in chili sauce

  3. 1 (4-ounce) can chopped green chilies

  4. 1/4 cup sliced green onions

  5. 1/4 teaspoon ground cumin

  6. 1/4 teaspoon ground black pepper

  7. 1 (8 1/2-ounce) box corn muffin mix

  8. 1 cup cold water

  9. 1/2 cup shredded Cheddar cheese

  1. Preheat oven to 425 degrees F. In a medium bowl, combine beef, chili beans, chilies, onions, cumin and pepper, mix well. Set aside.

  2. In a second medium bowl, combine corn muffin mix and cold water; mix well. (Mixture will be thin.) Pour batter into a greased 9-inch square pan.

  3. Spoon beef mixture into center of the batter, leaving a 1-inch border. Bake about 30 minutes or until cornbread topping is lightly browned and begins to pull away from the edge. Remove from oven; sprinkle with cheese. Let stand 5 minutes before serving.
