  1. 1 jar (16-oz.) pickled whole beets , drained

  2. 1/4 cup pitted kalamata olives , halved

  3. 1/2 lb. medium shrimp , cooked, peeled and tails removed

  4. 1/2 cup seeded, chopped cucumber

  5. 1/4 cup crumbled feta cheese

  6. 1 Tbsp. snipped fresh dill

  7. Prepared vinaigrette dressing

  1. Drain beets well, cut into quarters.

  2. Combine beets and olives in medium bowl.

  3. Top with combined shrimp and cucumbers.

  4. Sprinkle with feta cheese.

  5. Refrigerate for 2 hours until chilled.

  6. To serve sprinkle with dill, and drizzle with vinaigrette as desired.
