  1. 1 10-inch flour tortilla

  2. 1 Tbsp. butter, melted

  3. 2 tsp. granulated sugar

  4. 1/4 tsp. ground cinnamon

  5. 1/2 cup ricotta cheese or whipped cream cheese

  6. 1 Tbsp. powdered sugar

  7. 1/2 tsp. finely shredded lemon peel or orange peel

  8. 1/2 cup fresh blueberries

  9. 1/2 cup sliced fresh strawberries

  10. 1/4 cup shredded or flaked coconut, toasted

  1. Preheat broiler. Brush both sides of tortilla with butter. Place tortilla on a baking sheet. Broil 5 to 6 inches from the heat for 2 to 3 minutes or until lightly browned. Turn tortilla over. In a small bowl stir together granulated sugar and cinnamon. Sprinkle over tortilla. Broil 2 to 3 minutes more or until light brown. Remove and cool several minutes. To serve, in a small bowl stir together cheese, powdered sugar, and lemon peel. Spread over tortilla. Top with berries. Sprinkle with coconut. Cut into wedges to serve.
