  2. 1 3/4 pounds finely ground lean chuck

  3. beef

  4. 2 tablespoons grated onion

  5. 2 tablespoons grated ran green bell

  6. pepper

  7. 1 centiliter garlic -- mashed

  8. 1 1/2 tablespoons finely chopped chives

  9. paprika

  10. 1 pinches powdered thyme

  11. --Belmont sauce--

  12. 3 tablespoons butter

  13. 1/3 cup tomato ketchup

  14. 1 tablespoon lemon juice

  15. 1 teaspoon Worcestershire sauce

  16. generous dash Tabasco sauce

  17. 1 teaspoon prepared mustard

  18. salt

  19. black pepper

  20. a little mace to taste

  21. dry sherry wine

  1. Mix all ingredients together and shape into 6 individual small steaks, about 3/4" thick.

  2. Sprinkle with seasoned flour and brush with olive oil.

  3. Grill them for 5 to 6 minutes or more on each side, depending on degree of doneness desired.

  4. Belmont Sauce:

  5. Melt butter with the rest of the ingredients.

  6. Blend well.

  7. Stir in 2 tbs sherry and bring almost to a boiling point.

  8. Arrange steaks on a hot platter and pour sauce over them.
