  1. 4 cups 948ml Peeled, pitted peaches

  2. 1 1/4 cups 247g / 8.7oz Sugar

  3. 1/2 cup 80g / 2.8oz White raisins

  4. 1 cup 237ml Ripe raspberries or blueberries

  5. 1/4 cup 59ml Fresh lemon juice

  1. Put the peaches and sugar into a non-reactive pot. Place over medium heat and stir the peaches to coat them evenly with sugar. Cook for 10 to 12 minutes. Smash the peaches against the sides of the pot and continue to cook until all the sugar has dissolved and the peaches are turning soft. Cook for an additional 12 to 15 minutes. Add the raisins and berries and stir to combine. Cook 2 minutes before adding the lemon juice. Taste carefully and add additional lemon juice if desired.

  2. Cool and transfer to covered storage containers. Keep refrigerated.

  3. This recipe yields 3 cups.
