  1. 1 cup granulated sugar

  2. 1 cup kosher salt

  3. 4 cups cold water

  4. 2 whole star anise

  5. 2 bay leaves

  6. 1 tablespoon black peppercorns

  7. 4 whole pieces pork tenderloin

  1. Combine the sugar, salt, water and dried spices. Add the pork tenderloin and brine for at least 2 hours. Do not let sit in the brine for more than 24 hours. Remove from the brine and pat dry. Cover and place in the refrigerator until cooking time.
