  1. 1 cup 237ml Steamed or poached sablefish - cut 1" chunks

  2. 1 Tomato - diced

  3. 1 Avocado - peeled, diced

  4. 1/2 cup 73g / 2.6oz Diced cucumber

  5. 2 Green onions - diagonally sliced

  6. Lettuce

  7. Vinaigrette Dressing

  8. 3 tablespoons 45ml Oil

  9. 3 tablespoons 45ml Wine vinegar

  10. 1/4 teaspoon 1 1/3ml Salt

  11. 1/8 teaspoon 0.6ml Freshly-ground black pepper

  12. 1/8 teaspoon 0.6ml Crushed oregano leaves

  13. 3 splash Bottled hot pepper sauce

  1. Combine sablefish, tomato, avocado, cucumber and onions. Toss gently with Vinaigrette Dressing. Serve on lettuce-lined platter.

  2. Vinaigrette Dressing: Combine all ingredients. (Makes about 1/3 cup)

  3. This recipe yields 2 main-dish servings or 4 side-dish servings. Recipe may be halved or doubled.
