  1. 3 green onions, sliced (reserve 2 Tbsp. for garnish)

  2. 4 Tbsp. butter

  3. 1/4 cup flour

  4. 1 1/2 cups whole milk

  5. 6 oz. cooked lobster, cubed

  6. 1 1/2 cups half and half or light cream

  7. 1/4 cup dry sherry (or milk, if desired)

  8. 1/4 tsp. salt couple of dashes ground white pepper couple of dashes Tabasco sauce, if

  1. Melt butter in a large saucepan or dutch oven and saute the green onions, for 1 minute, over medium heat. Stir in the flour until smooth. Gradually stir in the milk, stirring constantly (a flat whisk works well) until mixture thickens and comes to a boil. Cook, while stirring, 1 minute more. Add the lobster, half and half or light cream, sherry (or milk), salt and pepper. Cook and stir until heated through. To serve, ladle into bowls and garnish with reserved green onions and pass the Tabasco, if desired.
