  5. 1/3 c Sweet rice flour

  6. 2 tb 2 t almond powder

  7. 1/2 c Cold water

  8. 3 c Cold milk

  9. 1/4 c Granulated sugar

  10. 1/4 c Sliced pitted red dates

  11. 3 tb Cold milk, if needed

  12. This unusual dish as a dessert, as a mid-way course in

  13. a large dinner, or as a snack. Pudding may be

  14. misleading, since it is really a thick, hot soup.

  15. In small bowl, mix rice flour & almond powder; add

  16. cold water a little at a time to make a thick, smooth

  17. paste. Thin further with 1/2 cup of milk. Pour into heavy saucepan, add remaining milk, and slowly heat to

  18. just under boiling, stirring constantly. Keep

  19. stirring to prevent lumping & burning. Turn off heat,

  20. cover & remove to cool place. You can prepare this

  21. first stage anytime ahead of dinner, keep covered &

  22. refrigerated. Pudding should be finished just before

  23. serving. Just before serving, reheat pudding, stirring

  24. constantly. When hot, add sugar a little at a time.

  25. Keep stirring. Add sliced dates. Cook just under

  26. boiling point for 1 minute. Add extra milk if pudding

  27. becomes too thick: it should have consistency of

  28. melted ice cream. Pour into individual bowls & serve

  29. hot. --
