  1. Cake

  2. 1/2 lb 227g / 8oz Unsalted butter - (2 sticks) - softened

  3. 1 1/2 cups 297g / 10oz Sugar

  4. 3 Eggs

  5. 2 teaspoons 10ml Vanilla extract

  6. 3 Egg yolks

  7. 1/4 cup 59ml Milk or buttermilk

  8. 1 cup 62g / 2 1/5oz Stone ground yellow cornmeal

  9. 2 teaspoons 10ml Baking powder

  10. 1 Blueberries - rinsed, picked over

  11. And dried Crumb Topping

  12. 2 cups 125g / 4.4oz Unbleached all-purpose flour

  13. 1/3 cup 65g / 2 1/3oz Sugar

  14. 1/3 cup 53g / 1.9oz Brown sugar

  15. 1/2 teaspoon 2 1/2ml Cinnamon

  16. 1/4 teaspoon 1 1/3ml Nutmeg

  17. 12 tablespoons 180ml Unsalted butter - (1 1/2 sticks) - melted

  1. Set a rack at the middle level of the oven and preheat to 350 degrees. Butter a 10- by 15-inch jelly roll pan.

  2. In a large mixing bowl, beat the butter and sugar until soft and light. Add the eggs one at a time, beating well after each addition. Beat in the vanilla. Stir yolks into milk. Sift together the flour, cornmeal and baking powder and stir into the batter in three additions, alternating with the yolks and milk, beginning and ending with the flour. Spread the batter in the prepared pan. Scatter the blueberries evenly over the batter, and press them in gently.

  3. To make the crumbs, mix the flour, sugars, cinnamon and nutmeg in a bowl. Melt the butter and stir it in. Rub the mixture to coarse crumbs by hand. Scatter the crumbs over the berries as evenly as possible.

  4. Bake the cake about 45 to 60 minutes until batter is firm and crumbs are well colored. Cool the cake in the pan on a rack. Cut the cooled cake into twenty four 3-inch squares. Remove the squares from the pan to a platter.

  5. This recipe yields 24 servings.

  6. Variations:

  7. APPLE CURRANT CRUMBCAKE SQUARES: Omit cornmeal and increase flour to 2 1/2 cups. Stir 1 cup currants into batter. Spread batter with 6 apples, peeled, cored, diced and cooked in 2 tablespoons butter and 4 tablespoons sugar until limp and cooled. Top with crumbs and bake.
