  1. 4 each boneless sirloin pork chops, 3/4-inch thick

  2. 2 tablespoons flour

  3. 1 tablespoon butter

  4. 1/2 cup chopped green onion

  5. 2 cloves garlic, minced

  6. 8 ounces mushrooms, sliced

  7. 1/2 teaspoon thyme, chopped, use fresh if available

  8. 8 ounces beer, room temperature salt freshly ground black pepper buttered noodles minced fresh parsley

  1. Preparation : Lightly flour chops. Melt butter in non-stick skillet over medium-high heatuntil foaming. Brown chops quickly on both sides approximately 1 minute eachside. Remove from the pan and set aside. Add green onion, garlic, mushrooms and thyme and saut an additional minute.Return chops to the skillet and add the beer; (my favourite is a nice strongdark English ale) bring to a boil. Reduce heat, cover and simmer for 7 to 8 minutes. Season with salt and pepperand serve with noodles, garnished with parsley, if desired.
