  1. Halibut with Oysters in Saffron Cream Sauce

  2. 4 4-oz halibut fillets

  3. 1 pint shucked oysters

  4. 1 tablespoon olive oil

  5. salt and white pepper, to taste

  6. 2 tablespoons butter

  7. 1 cup whipping cream

  8. 1/2 cup chardonnay

  9. 1/2 lemon, juiced

  10. 2 tablespoons shallots, chopped

  11. 1 clove garlic, chopped

  12. pinch saffron threads

  13. In a sauce pan, saute shallots and garlic in butter until wilted.

  14. Add wine and saute for 3 three minutes. Add lemon juice, saffron,

  15. cream and continue to simmer until reduced by 1/3(sauce fairly

  16. 15 minutes.

  17. Rub halibut with olive oil, salt and white pepper. Brown the fillets

  18. 2 minutes per side

  19. serving dish.

  20. 250 degree oven for 5 minutes.

  21. Bring sauce to high simmer; add oysters and cook until oysters firm

  22. 3 minutes

  23. Spoon oysters and sauce over halibut.
