  1. 1/2 Romaine lettuce head - (abt 3 cups) - torn bite-sized

  2. 1 Ripe tomato - cut into 8ths

  3. 1 Yellow bell pepper - cut into thin rings

  4. 1/4 Red onion - finely sliced

  5. 1/4 cup 27g / 1oz Finely-chopped celery

  6. 1/2 cup 73g / 2.6oz Crumbled chilled feta cheese

  7. 6 Kalamata olives - pitted, and Cut into slivers

  8. 1 tablespoon 15ml Drained rinsed capers

  9. Chopped fresh oregano - to taste

  10. Mustard Vinaigrette

  11. 2 tablespoons 30ml Red wine vinegar

  12. 4 tablespoons 60ml Olive oil

  13. 1 tablespoon 15ml Mustard

  14. Salt - to taste

  15. Freshly-ground black pepper - to taste

  1. Combine all of the salad ingredients. Combine all of the vinaigrette ingredients. Toss the salad with the vinaigrette at last moment.
